Cheese ripened in brine
Since ancient times, people know cheese with spicy and salty taste. In Europe, this cheese is a great snack, it is added to salad or other dishes. Everybody knows Greek salad, where one of the main ingredients is cheese matured in brine.
This cheese is made of pasteurised milk with lactic acid bacteria yeast, ferment, and salt. The key difference of the cheese is the maturing process. According to the specific recipe, after obtaining cheese mass, it is kept in brine for some time, in a specific temperature. Brine gives the cheese a special taste and aroma. Cheese has a soft texture, it is homogeneous and without any crust. Cheese is rich in minerals, proteins, and vitamins, as well as contains the valuable calcium and phosphor acids.
