Cottage cheese
There are long winters and short summers in Northern Europe and that brings rich traditions of milk production. Even the most demanding gourmands like cottage cheese with its tender taste and texture.
Cottage cheese is a curd product that is made of curdled pasteurised skimmed milk. During curdling, the buttermilk is separated and cheese grains are obtained that are later rinsed, dried, and cooking cream and salt is added. Industrially produced cottage cheese does not contain more than 80% water, and it contains at least 4% fat. The low-fat cottage cheese is an exception, it contains 0.01% fat. According to the specific recipe, herbs are added, for example, dill. Cottage cheese tastes good as it is and with bread or potatoes. It is also used in dessert recipes, etc.
